There’s something timeless about malva pudding — its golden, syrupy richness, its tender crumb, and the way it brings comfort with every spoonful. Rooted in South African heritage and cherished across generations, this dessert has always been a symbol of home and heartfelt hospitality.

In this recipe, we honour tradition while embracing mindful ingredients. Using Gracious Bakers Baking Flour, we’ve reimagined the classic malva to be completely gluten- and dairy-free — without sacrificing its beloved texture or deep, caramel-kissed flavour. The result is a pudding that’s just as indulgent, soft, and soul-satisfying as you remember, made for everyone at the table to enjoy.

Whether you’re baking for guests or simply treating yourself, this malva is a celebration of inclusivity, warmth, and the gracious art of baking.

INGREDIENTS

Ingredients:

Base

  • 160 Gram Gracious Bakers Baking flour
  • 5 Gram Bicarb of Soda
  • 2.5 Gram Salt
  • 2 Ea Eggs (40 Gram Each)
  • 100 Gram Coconut Sugar / Moscavado Sugar / Sugar Replacement
  • 125 Gram Coconut Milk or Alternative
  • 20 Gr Vegan Butter / Coconut Cream / Nut Butter
  • 15 Gram Lemon Juice
  • 15 Gram Apricot Jam
  • 2 Gram Vanilla Paste
  • Zest of ½ Lemon (Optional)
  • Zest of ½ Naartjie (Optional)

Caramel Sauce

  • 250 Gram Coconut Cream
  • 150 Gram Coconut Sugar / Sugar Replacement
  • 125 Gram Vegan Butter Replacement
  • 125 Gram Water
  • 2 Gram Vanilla Paste

What You Will Need:

  • 8 small moulds or 1 Square Baking Dish
  • Sieve
  • Scale
  • Hand Beater
  • Oven
  • Small Pot for the sauce.
  • Coconut Oil for the dish.

Method

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the Base:
  3. Oil your moulds with coconut oil.
  4. Sift the Baking Flour, bicarb and salt together.
  5. Beat the eggs and coconut sugar together until, thick and creamy and double in volume.
  6. Mix the melted butter, apricot jam, coconut milk, lemon juice and vanilla paste together and fold into your dry ingredients until well incorporated.
  7. Pour the mixture into your moulds ¾ full or pour into your oiled baking dish.
  8. Bake in your pre-heated oven for 20-30 Minutes until golden brown and baked to perfection.
  9. While baking prepare your sauce, in a small pot add all your caramel sauce ingredients together.
  10. Bring to a boil and simmer 3 -4 minutes until it coats the back of a spoon.
  11. When you remove the Malva pudding from the oven pour over the sauce ensuring it penetrates the puddings.
