This Sweet Shortcrust Pastry Apple Crumble is one of those timeless, homestyle recipes that brings people together around the table.

Made with our Gracious Bakers allergen-free flours, this crumble is honest, hearty, and full of warmth. The apples soften into a rich, spiced filling, the pastry bakes up tender and golden, and everything comes together just the way home baking should — nourishing, uncomplicated, and deeply satisfying.

Perfect for family gatherings, slow weekends, or a cosy dessert shared straight from the oven, this recipe is a reminder that good food doesn’t need to be fancy — just made with care.

INGREDIENTS

Shortcrust Pastry Dough

Filling

  • 1 kg Apples (peeled & sliced)
  • 50 g Currants
  • 35 g Chia Seeds
  • 50 g Coconut Sugar / Honey
  • 50 g Vegan Butter / Butter Replacement
  • 400 g Coconut Cream
  • Cinnamon (to taste)
  • Allspice (to taste)

Thickening Slurry (NEW):

  • 15 g Gracious Bakers Baking Flour
  • 30 g Water (mixed into a smooth paste)                                           

 

WHAT YOU WILL NEED

    • Tartlet moulds or tart dish
    • Scale
    • Hand beater or mixing bowl
    • Rice flour (for dusting)
    • Oven
    • Bowl of water for hands

METHOD

Shortcrust Pastry

  1. In a large mixing bowl, combine the flours, salt, and sweetener. Mix well to ensure even distribution.
  2. Add the chilled, cubed vegan butter. Using your fingertips, rub the butter into the flour mixture until it resembles coarse breadcrumbs.
  3. Add the lemon juice and gently bring the mixture together into a dough. Knead lightly until cohesive.
  4. On a lightly rice-floured surface, roll the dough to approximately 2–3 mm thick.
  5. Carefully place into tartlet moulds or a tart dish, pressing gently into the corners. Trim excess pastry.
  6. Preheat oven to 180°C (350°F). Line pastry with parchment paper and baking beans or rice.
  7. Bake for 10 minutes, remove weights, then bake a further 5–10 minutes until lightly golden. Set aside.

Apple Crumble Filling

  1. In a saucepan, melt the vegan butter and add apples, currants, coconut sugar, cinnamon, and allspice. Cook gently until apples soften.
  2. Stir in the coconut cream and allow the mixture to simmer.
  3. In a small bowl, mix 15 g Gracious Bakers Baking Flour with 30 g water to form a smooth paste.
  4. Add the flour slurry to the apple mixture after the coconut cream, stirring continuously.
  5. Cook gently until the sauce thickens and coats the apples evenly. Remove from heat.

To Assemble

  1. Spoon the apple filling into the prepared pastry shells.
  2. Top with crumble if desired and return to the oven briefly to warm through, or serve as is.

TIPS

  • For a lower-carb option, swap the shortcrust pastry for Gracious Bakers Vanilla Biscuits with Coconut Flour.
  • Best enjoyed warm with dairy-free ice cream or coconut yoghurt.
